SWEET GARLIC BRUSCHETTA WITH CARAMELISED FIGS AND PROSCIUTTO DI PARMA

Serves 4 people
Ingredients
- 8 slices of Prosciutto di Parma
- 8 caramelised figs
- 8 slices of French bread
- 3 garlic cloves
- 2 level tbsp sugar
- 2 tbsp white wine vinegar
- 4 tbsp water
- extra virgin olive oil
- salt
- mint
Method
Heat a few tablespoons of water with the sugar, add a pinch of salt and vinegar. Pour in the garlic and blanch for 5 minutes. Drain and let it cool, then crush the garlic cloves and dilute with a tablespoon of oil.
- Toast the slices of bread and spread with garlic
- Garnish with mint leaves and serve immediately
